YPH = (Harvest Profit) - (Seed Cost) - (Plot Plowing) / (Hours to Harvest)
Tomatoes 1.67
Blueberries 3.33
Pumpkins 2.50
Corn 2.50
Strawberries 5.00
Wheat 1.94
Sunflowers 3.33
Artichokes 7.50
Rice 2.29
Broccoli 4.64
Grapes 5.14
Spinach 1.81
Eggplant 17.81
Bamboo 3.68
Cucumber 22.50
With assuming long-term playing, we can ignore the initial cost for Trees and Animals (long like a year). Then, YPH will be
Star Fruit Tree: 10.4 coins / h
Apple Tree: 2.78 coins / h
Orange Tree: 4.69 coins / h
Peach Tree: 4.17 coins / h
Cherry Tree: 4.86 coins / h
Lemon Tree: 4.69 coins / h
Palm Tree: ??? coins / h
However, it seems that you can plant more than 1 tree in a unit-square (1 seeds can be plan in a unit-square). I didn't try, but it seems at least 4 trees in a unit-square. Possibly 9 trees. So Star Fruit Tree can actually give you more coins than Cucumber per unit-square (in long-term). If it's 9 trees, then Orange or Lemon Tree can even give you more coins than Cucumber.
Animals as well, but it seems that you can keep only 1 cow in a unit-square (you can keep more than 1 chicken in a unit-square).
However, if you want to earn exp more than coins, then seeds may be better than trees/animals.
